MAELI’S PHILOSOPHY
IN THE VINEYARD
AND IN THE CELLAR
Our wines are born from agronomic and oenological practices that respect nature and the raw material. Climate change, increasingly widespread monoculture, and the introduction of alien species have over time given rise to the presence of new plant organisms and pests in the vineyard. Pathogen control as first understood is now superseded by a new method that starts with the fortification of the vineyard itself, which must be a living and healthy habitat, so as to self-defend against increasingly aggressive and specialized pathogens. Strengthening vineyard defenses is closely linked to soil vitality. Hence the importance of caring for the microbiome, preserved by green manure and grassing, which promote soil aeration by plant roots and the presence of organic matter, which ensures the plants' own resilience and healthiness. In addition, the introduction of naturally occurring beneficial organisms that activate soil vitality, and occupy space, make it more difficult for pathogens to establish themselves, creating healthy competition that reduces their aggressiveness. This system, together with the natural biodiversity present in the Euganean Hills regional park where our vineyards are located, allows us to obtain the highest quality grapes with minimal environmental impact. We try with care and attention to give something back to the wonderful Nature that hosts us!
In the winery, artisanal winemaking techniques allow the expression and at the same time preserve the character of the grapes that are the offspring of that specific harvest. Cold maceration, favors the extraction of the noblest aromatic parts of the grapes, while spontaneous fermentations with indigenous yeasts contribute to the expression of the peculiarities of the grapes, the terroir from which they derive, and the vintage. Whenever possible, wines are not filtered, to enhance the textural heritage of the grapes as much as possible, and the use of sulfites is kept to a minimum so that the wine is as healthy as possible.
